Tequila Shot
A Tequila Shot is a single shot of tequila served with salt and a slice
of lemon or lime. The salt is licked off the back of the hand, the shot
is drunk and the fruit slice is quickly sucked. The salt lessens the
'burn' of the shot and the lemon enhances the flavor. Tequila has its
own special flavor that is almost tart and a shot leaves the tongue
tingling.
Mexican Tequila
History
The history of tequila dates back hundreds of years and a form of this
liquor was first made by the Aztecs. The modern version of the drink
originated around the town of Tequila, in Jalisco state in Mexico from
where the drink gets its name ( the town is located near a volcano - and
tequila is the Nahuatl word for volcano. The production of Tequila
started more than 400 years ago. When the Spanish conquistadors arrived
in Mexico in April 1530 they ran out of brandy they had brought with
them from Spain, so they fermented agave juice. The first factory was
established in 1600 by Don Pedro Sanchez de Tagle, the Marquis de
Altamira.

Information about Mexican Tequila
The only source for
Tequila is the mescal cactus which is a species of the agave plant. The
blue agave cactus takes twelve years to mature.
The drink called Tequila is a colorless intoxicating liquor made by
fermenting and distilling the sweet sap of the blue agave cactus plant.
The word is commonly mis-spelt as teqiula, taquila, taquilla, tiquila,
teqila, tequla, tequela and tequilla.
Mexican Tequila
Tequila is only one
type of mezcal, which is the name of any distilled alcohol made from the
agave plant. What makes tequila different from other mezcals is its
strict adherence to the standards set by the Tequila Regulatory Council
in Mexico. According to these standards the drink must be made with at
least 51 percent blue agave. The remainder is generally made up from
commonly sugarcane or maize. This special Mexican drink must also be
produced in the specific Mexican regions of Michoacan, Tamaulipas,
Jalisco, Guanajuato and Nayarit.
Types of Mexican Tequila Rating
There are several
different types of Mexican Tequila which is usually bottled in one of
four categories, the best tquila is Anejo and the rating is as follows:

Joven abocado (also called gold) - this is bottled whilst still
young but colored to resemble an aged tequila

Plata or Blanco (also known as white, silver or plata) - this
"silver" tequilla is bottled after a couple of months with flavoring
and coloring added

Reposado - this has been left to age about a year in oak barrels
("rested") before being bottled and may also contain added flavoring
and coloring. Some reposados also use the word "gold" on their label

Anejo meaning "aged" or "vintage" from 1 to 3 years in oak barrels
before being placed in bottles. The the best anejos is
often compared to fine cognacs

Casco) brand has been produced by a private company owned by the
Camarena family which they established in 1938. Casco Viejo is distilled
and bottled by Tequila Supremo company on the Camarena family estate.

produced by Allied Domecq which was previously known as Allied Lyons.
Sauza tequila was named after Don Cenobio Sauza who established the

The Cabo Wabo brand
was developed by musicianSammy Hagar who owned a cantina called Cabo
Wabo and wanted a specific tequila to serve in his restaurant. Sammy
Hagar linked with a small Mexican Tequila maker that had been in
operation since 1937 and produced the Cabo Wabo Tequila brand in 1996.
Jose Cuervo

The Jose Cuervo (Aka
Cuervo) brand is produced by Tequila Cuervo La Rojena, S.A. de C.V. The
history of Jose Cuervo satrted in 1758 when Jose Antonio de Cuervo
received a land grant from the King of Spain in the Mexican state of
Jalisco where he started to produce mezcal in a small factory on his
land. In 1795 one of his descendants, called José María Guadalupe Cuervo,
used the original grant of land to build a distillery for tequila
production which was later named Fabrica La Rojena. The brand name of
Jose Cuervo was used and the company is now owned and run by heirs of
the Cuervo family (the Beckmann family).
Don Julio Tequila

The Don Julio brand
is produced by Pernod Ricard. Don Julio Reposado is made from 100% blue
agave, double distilled and matured in small oak barrels. Don Julio is
named after the founder, Don Julio Gonzalez Estrada.
1800 Tequila Brand

The 1800 Tequila
brand is produced at the La Rojeña distillery in Tequila, Mexico and was
first imported to the U.S. in 1975 by its parent company, Jose Cuervo.
1800 Tequila was named in commemoration of the year in which the first
successfully aged drink was produced.

1940s. The worm is actually the larval form of the moth Hipopta agavis
that lives on the blue agave plant. Finding a 'worm' in the agave plant
indicates an infestation and therefore a lower quality product.
